1 lb. butter
1 c. onion, diced
1 c. celery, diced
2 qts. half and half (milk)
1 c. flour
6 medium potates, diced
6 c. water or chicken broth
2 lbs. imitation crab
Swiss or American cheese (optional)
Seasonsings celery salt, parsley, salt and pepper
In medium stockpot, saute onion and celery in butter.
Using a whisk, stir in flour, then 1/2 & 1/2.
Let mixture thicken over low heat.
In another pot, cook diced potatoes in liquid until tender, but not over cooked.
Pour potatoes and liquid into milk mixture.
Stir in crab and simmer for 30 minutes.
Add seasonings to taste.
with cheese, if desired.
